A FEW GOOD QUESTIONS

Small greens,
explained.

What are microgreens?

Microgreens are young edible plants harvested after their first leaves develop. You eat the tender stems and leaves. They’re different from sprouts, which are usually eaten with the seed and root.

Which variety should I try first?

Pea shoots are sweet and mild, while sunflower has a nutty flavor and satisfying crunch. Broccoli is another gentle starting point. Choose radish if you enjoy a peppery kick.

How do I use them?

Add them to sandwiches, salads, grain bowls and eggs. Many work best as a fresh finishing touch. Pea shoots can also be lightly cooked.
